I come from a family of good cooks. My origin is Armenian and I spent my childhood in Syria and have been an Australian for decades. Most of my recipes have been in my family for many generations.
Armenia is located in the region south of the Caucasus and north of Iran, at the crossroads of the East and the West. One of the most ancient civilizations that are still around today, Armenia has had strong ties with Greece, Persia, Rome, Syria, Anatolia, Jordan, Lebanon, Palestine, Egypt and many more Middle Eastern Countries.
This melting pot of cultures and culinary influences imbues Armenian cuisine and I bring this rich heritage to your table. I found, when living in Syria, that many of these same influences exist in the cuisine there, perhaps with different names and subtly different ingredients or slightly altered combinations.
One of my signature dishes and a highlight of Middle Eastern food is Mezza (Appetiser). It is a generous spread of small dishes, mostly eaten without cutlery, using flat bread (khoubiz), lettuce or vine leaves.
Another favourite of mine and my customers is Kibbeh, the national dish of Lebanon which comes in many varieties, the main ingredient being very fresh, finely ground beef or lamb, seasoned with spices and mixed with burgul (cracked wheat).
